Just like most people, Kim struggled with switching to a plant based diet. It took her months after the death of her father from Alzheimer’s to realize that she didn’t want to live everyday with fear of having the same illness that took her father too soon. From all the latest research, she learned that food is the best medicine and this is why she is committed to sharing with other the power they have to improve their own health by eating more plants. Like Hippocrates said once, “Let food be thy medicine and thy medicine be thy food.”

Simply Plant Based Kitchen advocates a whole food plant based way of eating. Basically, it centers on whole plant foods that are minimally processed, and minimizing or avoiding, animal products, dairy, and processed foods. Whole food plant based eating also minimize or avoid all oils, which are a processed food, salt, and sugar.

Poor diet and lifestyle is usually one of the triggers of chronic diseases like diabetes, obesity, heart disease, cancer, and Alzheimer’s. For years, health professionals and registered dietitians have been supporting the perks of eating plants and cutting back on meat and other processed foods. In fact, following a plant based diet is said to help lower blood pressure, keep the heart healthy, prevent type 2 diabetes, lose weight, decrease the risk of cancer, improve cholesterol, and minimize the risk of stroke.

Kim acknowledges that transitioning to a healthier lifestyle is not easy. Through Simply Plant Based Kitchen, she hopes to show others how simple it can be with her recipes, guides, and classes.
