Miami’s Chifa Du Kang restaurants sizzle with ‘Chifa,’ a fusion cuisine that’s Peru’s best kept culinary secret

When it comes to delicious comfort foods, the best kept secret in any Peruvian’s repertoire is “Chifa” — a Chinese-influenced Peruvian cuisine, that fuses the best of both worlds.

For years, Peruvians have feasted on the many exquisite dishes born from this mix: Scrumptious stir-fry dishes served family-style like arroz chaufa, and the juicy lomo saltado, a soy sauce-doused, sautéed beef tenderloin that’s cooked on the Chinese wok, among many others.

And while for natives, Chifa food is largely synonymous with Peru, most outside the Latin American country—that’s home to the world’s largest population of Chinese residents in the continent—haven’t been as lucky to get a taste. That’s until now, of course! And it’s all thanks to the Tou family, who’s set out to change that with their Chifa Du Kang restaurants in Miami, both the flagship in Westchester and the newly opened locale in Kendall.

“The secret’s out!,” chef and restauranteur Anson Tou, of Chifa Du Kang, says. “We want everyone to taste Chifa, to taste the bold and rich flavors that stem from fusing both of our cultures, the Chinese and Peruvian, and through our food enjoy that same signature feeling of ‘comfort’ Chifa has represented for all Peruvians for so long.”

Thanks to the Tous, diners of all nationalities and walks of life can now explore the mouthwatering flavors that stem from drawing on the richness of these two cultures. And do so in a trendy setting, where the food is not the only Instagram-worthy element. 

The Kendall restaurant features custom, Wynwood-like murals by renown artists Cyn & Ben of @ChalkandBrush. Colorful works, which in true Chifa Du Kang fashion, showcase the best of each country: One is an amalgam of Machu Picchu and The Great Wall of China, while another lets guests know “It’s Chifa Time!”

But for the Tou family, whose humble beginnings as Chinese immigrants in Peru fueled a deep love of cooking, Chifa is about more than delicious meals. For them, Chifa’s about sharing their Chinese-Peruvian culture with others, and gifting them with a welcome space to gather, share and make family memories together.

It’s what’s always worked for them and is part of their “secret sauce,” says chef Anson Tou, who along with his sister Vikki, grew up watching his parents cook in the kitchens of the family restaurants in Lima. Now at the helm, Tou, a chef and businessman, and Vikki, an architect who designed the Kendall restaurant, are poised to elevate Chifa cuisine in Miami and the world over.

About Chifa Du Kang and the Tou Family

For more than 40 years, the Tou family has been dedicated to perfecting the art of Chinese-Peruvian cuisine, known as Chifa. The Tous, Chinese-Peruvian immigrants who come from humble beginnings, at one point opened and operated four Chifa restaurants in Lima, Peru, most located in some of the city’s most upscale areas such as Santiago de Surco, San Borja and Miraflores.

In Miami, the first Chifa Du Kang restaurant, the family’s flagship, opened in Westchester 13 years ago.
