First Kansai-Style Udon Specialty Restaurant to Open in Toronto

TORONTO - April 23, 2019 - PRLog -- For centuries, udon has been among the most popular traditional dishes in Japan. Hailing from the southern-central region of Japan, Udon Kitanoya introduces Toronto to its most authentic taste of udonya. This noodle specialty restaurant will be the first to bring Kansai-style flavours with udon varieties from different regions of Japan.

What differentiates Kitanoya's udon noodles is their dashi broth. Dashi, the essence of Japanese ingredients, is the heart and soul of udon. Kitanoya's dashi broth consists of high quality ingredients including Japanese kombu and four different types of dried fish (tuna, mackerel, sardine and bonito) in order to reach Kitanoya's delicate yet full-bodied umami taste characteristic of authentic udon.

"We want to show Torontonians the intricacy of a great, authentic bowl of udon. It's a staple in many Japanese eateries across the city, but not many know the secret to elevating the dish," says Benson Lau, the co-owner of Udon Kitanoya. Lau is also the entrepreneur who brought Toronto its first Japanese souffle pancake shop last summer.

Udon Kitanoya will serve the most authentic udon creations using high quality ingredients from family recipes passed down for generations. The menu consists of 15 different types of hot and cold udon dishes alongside a variety of Japanese snacks.

Executive Chef Shikatani Masatoshi is the mastermind behind Kitanoya's carefully curated and diverse menu. With over 30 years of cooking experience in Japan, Masotoshi is bringing the traditional udon flavours such as the Niku Udon, Japanese Curry Udon and some more western-influenced dishes like Butter Garlic Clam, Crab Chili Tomatoes and Creamy Mentaiko – a modern take on a traditional dish featuring Japanese spicy cod roe.

Grand opening for the much anticipated Japanese udon restaurant is set for Saturday May 18, 2019. Udon Kitanoya welcomes all local food enthusiasts to stop by and enjoy a taste of traditional Japanese cuisine. To celebrate, 200 free bowls of udon will be given out from 12pm-2pm.
